Waffle is another dish that brings childhood memories back to life. I would make them with my family and friends all the time when I was little and eat huge stacks of them. Being vegan does not mean you can’t make waffles any longer. In fact this recipe brings me that emotional feeling of home and comfort. No harm just love for everybody (it’s getting cheesy now so lets get into the recipe 😀 ).
470 ml plant based milk (I used almond milk)
1 TSP Apple cider vinegar
3 tbsp oil (I used sunflower oil)
3 tbsp maple syrup
260 g all purpose flour
pinch of salt
1 tbsp baking powder
1 tbsp cornstarch
In a large bowl mix the wet ingredients first and then add the dry ingredients. If you don’t have a non stick waffle iron put some fat so the dough won’t get stuck to it. Depending on your iron leave the waffle for a couple of minutes.
The dough makes aprox. 5 waffles. Feel free to double the ingredients to get more of these goodies.
I used to eat my waffle with only powdered sugar… Nowadays I love them with fresh fruit such as banana, passion fruit and raspberries. I also topped mine with Attila Hildmann’s Matcha Chocolate, so if you are a matcha freak don’t miss out on these!
