#5 What I eat Wednesday

Working till midnight – getting 3 hours of sleep – flying home at 6 AM. Just now as Im writing this I reached a little low point, feeling week and funny. Still very enthusiastic for food and again I wanted to keep it as plain, clean and healthy as possible today. Kinda worked – see for yourself. 

As I got up at 4:30AM and had my last meal at about 00:30AM I did not feel like having breakfast (it would have rather been a dessert from late dinner lol). I don’t try to eat as much while traveling as I enjoy feeling light. Carrying heavy stuff + heavy body…not a good idea.

So my first meal was after landing. I grabbed a Red Beauty Juice at Mr Clou packed with beetroot, carrot, cucumber, banana, pineapple, apple, lemon and ginger.

I took my dog and we went for a walk in the city, ending up having a soy cappuccino and a cacao energy ball.

Back home Im the person who is in charge of food. I feel like I’m constantly cooking something for someone – and I love it. I checked whats in the fridge and made:

3 small sweet potatoes      1 zucchini        1 large onion       2 small red capsicum                                   I made a sauce with 4 TBS of Olives Oil, 1 ginger clove diced, 2 spring onion chopped, 1/4 can coconut milk, a lot of salt (as the veggies soak it all up) and pepper and some water. Pure it all into the casserole and bake for 30 minutes. See in the picture how thin I cut the veggies.

Went shopping after lunch and found VioLife cream cheese that I have heard to much about but never tasted. I had an amazingly delicious slice of bread with this hot pepper cream cheese. It was good – quite spicy actually.

I also constantly snacked while prepping for a dinner tonight. So lots of carrots, avo and other dip left overs.

We had tons of different breads, veggies sticks, hummus, my home made TRIO DIP: red bean dip, avo dip and “quark” dip and more snacky things. Ill post a recipe on the TRIO dip in an individual blogpost.

I think my plan staying clean and healthy work out 50%.. but plans are there to change them right? I also won’t pressure my eating habit of this day because I set a rule the other one. I eat as I feel and when my body craves food.
